| Healthy Breakfast : Broken wheat upma
Broken wheat is a rich fibre nutrient value when added to a healthy life.
Advantages of broken wheat:
1. Reduces constipation and gas trouble. 2. Reduces cholesterol. 3. Good for diabetes and heart patients too 3. Well suited for all ages 4. The moisture and fiber lock in the wheat granules gives strength and good health 5. Helps a lot for reducing obesity.
Method :
Clean and wash the broken wheat thoroughly. Par- boil the broken wheat in 2 cups of hot water for 3 to 4 minutes. Drain and keep aside. Heat the oil in a pressure cooker, and add the mustard seeds. when the seeds crackle, add the green chillies and saute on a medium flame for a few seconds. Add the onions and ginger, mix well and saute on a medium flame for 1 to 2 minutes. Add the green peas and carrots, mix well and saute on a medium flame for 1 to 2 minutes. Add the broken wheat, salt and 1¼ cups of water, mix well and pressure cook for 2 whistles. Allow the steam to escape before opening the lid. Serve immediately garnished with coriander.

| Goans Recipe Mushroom do Piazza Ingredients 250 gm mushroom / 500 gm onions / 4 tomatoes / A pinch of turmeric powder / ½ tsp chilli powder / ¾ tsp salt / 1 tsp coriander powder / 1 tsp garam masala powder / 1 tsp fresh cream / 2 tbsp oil / 3-4 garlic cloves Preparation Wash the mushrooms and keep aside. Chop onions and tomatoes and make a paste of half the onions and garlic cloves. Heat oil in a pan and stir fry the onion-garlic paste till pink. Add turmeric, chilli, coriander powder and salt. Sprinkle 1 tbsp water and fry the masala mixture. Add chopped tomatoes and stir fry till tomatoes are tender. Add mushrooms and rest of the onions, mix well and cover the pan with lid and cook till onions are soft. Open the lid and sprinkle garam masala and fold the mixture. Garnish with cream and serve hot. Pineapple and Mango Sasvam Ingredients 1 cup ripe, fresh mango, cubed / 1 cup pineapple chunks (canned: drain, save juice to grind spice mix) / 1 cup mango pulp (available in large cans in Indian grocery stores) / 1/2 cup soyi/coconut gratings / 3 suki mirsaang/red chillies / 1/4 tsp. tamarind paste / 1/2 tsp. Salt / 1/2 cup (or less) sugar / 1 tsp. mustard seeds (use small black ones if possible) Preparation Mix salt, sugar, mango cubes, pineapple chunks, mango pulp in a large bowl. Stir well, keep aside covered. Grind in a mini-blender: coconut gratings, tamarind paste, mustard seeds, red chillies and pineapple juice. Add this ground spice mix to the bowl of fruit and stir till well mixed. Refrigerate. Serve cold. Note: Pineapple chunks come in heavy or light syrup. Adjust the amount of sugar accordingly. Optionally, you may add half a cup of green or red seedless grapes. This is a very traditional Konkani dish. | |

| CHICKEN SHAHI MASALA...
Chicken - 1kg Ginger paste - 1tbsp Garlic paste - 1tbsp Green chilly paste - 1tbsp Onion (saute in little oil & then grind to paste) - 2 1/2 cups Cinnamon,Cloves,Cardamon - 3 pieces each White pepper pwd - 1 tbsp Cashewnut (soak in water & make a paste) - 10-15 Kasoori methi (dried) -a pinch Jeera pwd (nalla jeerakam ) -1tsp Coriander leaves Salt - to taste Oil
1.Heat oil in a pan add cinnamon,cardamon,cloves & saute to this add ginger paste,garlic paste,green chilly paste & saute well till its raw smell disappears.
2.To this add onion paste & saute till water content goes.
3. Add chicken,white pepper pwd,kasoori methi,jeera pwd ,a cup of water,salt & cook till done.
4.To the cooked chicken add cashew nut paste & when it turns thick add chopped coriander leaves & serve hot.

| CHICKEN HARIYAALI..
To grind Spring onion - 1/2 cup Green chillies - 8 Coriander leaves - 1 cup Pudina - 1 cup Garlic - 6-8 cloves Ginger - a small piece Jeera - 1tsp
1.Grind all the above ingredients to fine paste.
Chicken - 1 kg Lemon juice - 2 tbsps Thick coconut milk - 2 cups Garam masala - 3/4 tsp Coriander leaves - to garnish Oil Salt
2.Heat oil in a pan,saute the grinded paste(step 1) till the raw smell disappears.
3.Add chicken to this paste & cook it in low flame till its done.(dont add water)
4.To the cooked chicken add thick coconut milk & cook till the gravy turns thick.
5.Add lemon juice,garam masala,coriander leaves & remove from fire.
6.Serve it hot.
